Homemade soup recipe: Broccoli and kale

Did you know today is homemade soup day? It’s the perfect way to ensure you’ve had a hefty dose of nutrients and so warming and comforting that it’s guaranteed to chase the last of the January blues away.

There’s nothing that looks more healthy than a bowl of bright green soup – and thankfully this broccoli and kale soup is as delicious as it is good for you. This bowl of goodness is full of alkaline ingredients – useful if you suffer from heartburn. And keeping your body in an alkaline state means your immune system will operate on full power and keep you safe from coughs, colds and more serious chronic disease. 

This soup is jam packed with nutrients from the abundance of fabulous greens, not to mention the turmeric, garlic and ginger (all powerful antioxidants). Which means it’s the perfect go-to meal whenever you feel you might be coming down with something. 

As well as being nutrient dense, it’s also low fat and low calorie so makes the perfect lunch for those keeping an eye on their weight. 

Broccoli and Kale Alkaline Soup

Ingredients

500ml vegetable stock

3 tsp olive oil

2 garlic cloves

1 inch of ginger root, sliced

½ tsp ground coriander root

½ tsp turmeric

Pinch of salt

200g sliced courgette

85g broccoli

100g chopped kale

Juice and zest of 1 lime

1 small pack flat leaf parsley

Method

Sweat the the sliced garlic, ginger, coriander root, turmeric and salt in the olive oil for 2 mins, before adding 3 tablespoons of water.
Add the courgette and mix well to cover the slices with the spice mixture. Cook for 3 minutes. Then add most of the stock, and leave to simmer for a further 3 minutes

Add the broccoli, kale and lime juice with the rest of the stock. Cook again for another 4 minutes until all the vegetables are soft.

Take off the heat and add most of the chopped parsley. Blitz in a blender and garnish with lime zest and parsley.
