Recipe for Omega-3 rich pancakes

Omega-3 is a wonder oil for the body and brain. Not only does it help us physically by reducing inflammation – something which has been linked to cancer and heart disease amongst other health complaints – but it’s also good for us emotionally too. The essential fatty acid Omega-3 can help our brains function well and has been linked with aiding the treatment of depression and anxiety. It’s also been found to help prevent age-related brain degeneration and insomnia. 

And the benefits don’t stop there as your skin is also a fan! Omega-3 oil has also been found to help prevent the skin getting sun damaged and also improves the make up of your skin. A healthy cell membrane is needed for soft, moist, supple and wrinkle-free skin which is why omega-3 is also credited with helping give a youthful, glowing complexion.

Flax seeds are a fabulous plant-based source of Omega-3, as well as fibre. They are best eaten ground as this makes them easier to digest and the nutrients within more accessible. These super easy pancakes use a healthy portion of flax as well. Look out for Omega-3 rich eggs to really up your intake. Hens laying these eggs are fed a diet of flax or algae to boost their Omega-3 content. These pancakes are dairy, sugar and gluten free and so quick to make. This recipe makes enough for 2 pancakes.

Ingredients:

One ripe banana, mashed

2 eggs

½ tablespoon ground flaxseed 

½ teaspoon cinnamon

1 tablespoon oil

Method: 

Beat all the ingredients together.

Heat the oil in a frying pan and when hot form two pancakes with the mixture.

Reduce the heat to medium and cook the pancake until they are firm on the top and golden on the bottom, it should take just a couple of minutes.

Flip and cook on the other side.

Serve immediately.
